The evening opens with a wood-smoked half quail — spatchcocked and seared over live oak coals — served on a bed of roasted corn succotash with charred poblano and a light herb vinaigrette. Small in size, massive in flavor. This course sets the tone: scratch-made, fire-kissed, and nothing wasted.
Course Two: Butternut Squash Bisque
A velvety bisque made from roasted Hill Country butternut squash, finished with a drizzle of brown butter and fresh thyme. Silky and warming — a transition course that bridges the bold opener to the centerpiece that follows.
Course Three: Tomahawk Ribeye, Woodfire Roasted
The centerpiece of the evening. A full tomahawk ribeye — dry-aged and seasoned simply with salt, cracked pepper, and fresh rosemary — cooked low over live coals and finished with a hard sear. Carved tableside and served with roasted fingerling potatoes and seasonal greens. This is the cut that starts conversations and ends debates.
Course Four: Banana Bread Pudding Crème Brûlée
A house original. Chef T's take on two classics — the warmth of banana bread pudding meets the crisp, caramelized finish of crème brûlée. Served with a vanilla bean cream and a dusting of brown sugar, torched to order. A fitting close to an evening built around the table.
